Grass Fed Beef

We are pleased to offer Grass-fed clean beef from happy cows. Metheny family Farm directly across the street raises Scottish Highland Cattle. No antibiotics or growth hormones, only mineral rocks and healthy nutrient-rich Hay and Grass. Once the cattle arrive on our farm, they eat only organic pasture and organic mineral salt. Throughout the year, they are rotated to prime pasture on the schedule most beneficial to the health of the animal, the taste of the beef. To find out more about how our animals are raised, check out our page on rotational grazing. All of our beef is butchered locally at a USDA inspected butcher shop and is delivered frozen and vacuum sealed in packages labeled with the cut and weight.

Beef Subscriptions

We intend to offer two different Beef Shares or a Half Beef beginning spring of 2024 for delivery in the fall of 2024.

Small Beef Subscriptions will contain approximately 35 lbs of steaks, roasts, and ground beef. This will fit in a standard freezer and still leave room for other things.

Medium Beef Subscriptions will contain approximately 70 lbs of steaks, roasts, and ground beef. This fill a standard freezer completely. 

Our Beef Shares will include cuts from both the front and hind quarters and are put together to offer a nice variety of cuts. They will contain a diverse mixture of steaks, roasts, ground beef and some miscellaneous items such as liver and stew meat by request. This means our shares contain about 55% ground beef, 15% loin and rib steaks, 10% other steaks (mostly round steak and sirloin tip steak, but also flank and skirt), 14% roasts, and 6% miscellaneous items like soup bones, organs or oxtail, by request. By default, larger packages will contain a larger variety of steaks and roasts and have more variety of miscellaneous items. Each cut will be frozen, vacuum sealed and labeled with the weight. Our shares will include a list of each cut you receive so you can track what gets used through the year.

Half Beef

Costs of a half beef will based on the hanging weight + the butchering fee ($5.50lb hanging weight + standard butchering fees).

For reference, a typical half beef will have 245 lbs hanging weight. 

When you purchase a Half Beef, you have a wide range of choices in how you'd like it butchered. It is a great way to get an education in the various cuts of beef that are available and to begin a culinary adventure as you learn the recipes specifically tailored to each cut. Half a beef is typically between 140 lbs and 180 1bs of finished product, which is larger than a regular kitchen freezer. You may want to split a half beef between two, three, or four families. If split four ways, the meat will fit in a standard freezer while leaving space for other items. If split two ways, the amount of meat can fill a standard freezer. If you plan to split a half with some friends, we encourage you to check out the processing form so you can discuss how you would like your half to be cut.
